 ☆How to making a Basque cheesecake.

Japanese Basque cheesecake was made with the image of cheesecake sold in the Basque region of Spain. In home place, people don't called “Basque Cheesecake”. Basque cheesecake has been popular in Japan since around 2018, and the nickname “Baschie” has appeared. The surface is black as if it was burnt, and the inside is rich taste.

I started making sweets when I was in my first year of high school. When I made a Basque cheesecake with this recipe, I was able to make the first sweets that I thought was really good. My older sister, who is strict about the taste, praised me more than she had ever had before. Since then, I have come to like making sweets more.

☆Ingredients for about 5people (The number of people is determined by the method of cutting.) :
· cream cheese (200g)
· flesh cream (120ml)
· sugar (70g)
· an egg yolk 
· eggs (90g ... about two)
· cake flour (a teaspoon)


☆Tools
· a mixing ball (nomal~ large size)
· a spatula
· a powder sieve
· a whisk (or hand mixer)
· a cake mold (15cm round)
· an oven
· a baking sheet
· baking paper (about 30cm in length)

1. First, wash your hands and preheat the oven to 250℃. At that time, you must not to forget to take out the baking sheet from the oven.

2. Second, mix the cream cheese and sugar in a mixing bowl with a spatula. It is important to keep mixing until the lump of cream cheese mixed with sugar becomes creamy.

3. Third, add an egg yolk to the mixing bowl of step 2 and mix further with a whisk. 

4. When the yellow of the egg yolk mixes and disappears, add beaten eggs. At that time, to prevent the separation of the dough and eggs, put the beaten eggs in three times and mix them together. 

5. When the dough and eggs are completely mixed, add flesh cream and shaken cake flour and mix. You don't have to mix too much.

6. After the white color of the fresh cream mixes and disappears, line roughly a cake mold with baking paper and pour the dough into the cake mold.

7. Then, put the dough poured into the mold on the baking sheet and bake the dough in a preheated oven for about 25 minutes. Please wait and bake until the surface turns black.

8. After baking the dough, remove the remaining heat and cool overnight in the refrigerator.  Then a Basque cheesecake is completed!

☆Recommendations and future
I introduced a special Basque cheesecake recipe that was received good reviews from my family. If you want more cheese taste, I recommend you to increase the amount of cheese or reduce the amount of eggs. You can add vanilla essence to enjoy the aroma, or add honey to enjoy a slightly different flavor. If you prefer something refreshing to a rich flavor, you can change it to baked cheesecake. Besides Basque cheesecake, there are many other cheesecake varieties, so I'd like to find the best recipe for each!
